The Easter season is that wonderful time of year, when spring flowers seem to appear overnight, blades of green grass replace old brown stubble, and flowering trees unfurl in beautiful color. Springtime birds return with songs of joy, and rainbows can follow warm, stray spring showers. These are just a few of the many ways the Lord gives us renewed hope!

Spring is also a good time to maybe try some new easy breakfast recipes, like these for Chive Ham Breakfast and Praline Toast.

The breakfast casserole can be made the night before, covered and refrigerated overnight, and cooked in the morning. If you prefer something sweet, this praline toast can be made in minutes, giving you plenty of time to enjoy Easter Sunday with the family. Happy Easter!

BREAKFAST BAKE WITH HAM AND CHIVES

1/2 cup chopped onion

1 tablespoon of butter

1 cup chopped cooked ham

1 medium tomato, chopped

2 cups cookie/pastry mix

1/2 cup of water

1 cup (4 ounces) grated Swiss or cheddar cheese

2 large eggs (or 3 small)

1/4 cup milk

1/4 teaspoon dill

1/4 tsp salt

1/8 teaspoon black pepper

3 tablespoons chopped chives

In a skillet, sauté the onion in the butter until soft. Stir in ham and tomato; put aside.

In bowl, combine cookie mix and water; mix well. Press the dough onto the bottom and 1/2 inch up the sides of a greased 13 x 9 x 2 inch baking dish.

Spread ham mixture over crust; sprinkle with cheese.

In a bowl, beat eggs, milk, dill, salt and pepper; pour over cheese. Sprinkle with chives.

Bake uncovered at 350 degrees for 25 to 30 minutes or until a knife inserted near the center comes out clean. Makes 8 servings.

PRALINE TOAST

1 stick of softened butter

1 cup packed brown sugar

1/3 cup pecans, finely chopped

12 slices French bread, cut into 1/2-inch slices

Combine butter, sugar and pecans. Spread on slices of bread.

Broil until golden and bubbly, just a minute or two.

Note: If you only want a few pieces of this toast, put the remaining butter mixture in a small, tightly covered plastic container and store in the fridge to use as needed. Just take it out ahead the next time you use it and leave it at room temperature so it spreads easily on bread before baking.
