The Food Network host added: “The roasted vegetable penne is perfectly cooked and bursting with different flavors.”

She cut mushrooms, summer squash, zucchini, red peppers and onions. “The secret to roasting these vegetables is to cut them all about the same size,” De Laurentiis explained. “That way they bake evenly in the oven.”

“What makes these dishes so fun is the abundance of all the vegetables and the colors,” De Laurentiis explained.

Next, the Food Network star placed the vegetables on a foil-lined baking sheet and drizzled with olive oil. Then she sprinkled salt, pepper and Provencal herbs over the vegetables and tossed everything together.

She roasted the vegetables in a 450 degree Fahrenheit oven for 15 minutes.
